The Science of Wines

Few people would know this, but in fact Denmark houses some of the front runners in the development wine cultures. It appears almost secretly, but for long,  yeasts, enzymes and anti-agents for unwanted fungi in fermentation has been developed in Denmark and presently the danish viniflora supports upto 35.000 vineries worldwide.
